 Apple-Blueberry Oatmeal Pancakes
 

Ingredients:
2 egg whites
1 cup apples, peeled sliced and pre-cooked*
¾ cup oatmeal
¾ cup multi-grain pancake mix
2 scoops vanilla protein mix
2 tablespoons vanilla or plain nonfat yogurt
1 tablespoon cinnamon
1 tablespoon vanilla extract
¼ teaspoon nutmeg
1/2 cup cold water
1 cup blueberries, rinsed well
Nonstick cooking spray

Strawberries, bananas, kiwi slices, blueberries and apples with a dollop of nonfat yogurt and cinnamon make for a great topping!

Directions:
1. 
In a large mixing bowl, lightly beat egg whites then add apples, oatmeal, pancake mix, protein, yogurt, cinnamon, vanilla extract and nutmeg. Slowly add ¼ c. water and mix until batter is a thick consistency, (spatula should stand upright in batter.) If batter is too thick add a little more water; if it is too thin add a little more oatmeal.  Next, gently fold in blueberries.

2.  Preheat large skillet with nonstick spray over medium-high heat. Place four large spoonfuls of batter in hot skillet, pancakes should be approximately 3 inches in diameter. Check pancakes in two-three minutes by sliding spatula under checking for desired brownness.  Flip pancakes and repeat to other side. Repeat; makes 5-6 pancakes.

3. Serve hot, top with more cooked apples and blueberries, honey, low-fat syrup or even low-fat yogurt. Sprinkle with cinnamon and Mmmmm what a great way to start the perfect day!

*To pre-cook apples simply microwave on high for two minutes.

Pancakes are great if you are on the go. Try doubling up the batter and preparing enough to last you a few days or even a week and refrigerate. This way when you find yourself in a hurry just pop one in the microwave for 30 seconds, top with non-hydrogenated peanut butter or jelly and out the door you go! These pancakes make for a great early afternoon hi-energy snack too!
