Ingredients: 18 large plum tomatoes, halved lengthwise ½ cup olive oil 2 tablespoons chopped fresh parsley 2 tablespoons chopped fresh basil 1 tablespoon fresh rosemary 1 tablespoon chopped fresh thyme 1 tablespoon Parmesan cheese garlic salt pepper
Directions: 1 Preheat oven to 350. Place tomatoes; cut side up in baking dish. Combine herbs in a bowl. Brush tomatoes with olive oil then sprinkle with half of the herb mixture.
2 Roast tomatoes; approximately 1 hour 15 minutes or until tender and slightly brown around edges. Sprinkle with remaining herbs and Parmesan cheese then serve.
