Marinade for Chicken: 1 lb. boneless-skinless chicken breast (equal to 4 breasts), lightly pounded ½ cup non-alcoholic dry white wine ¼ cup apple juice 1 tablespoon lime juice 1 teaspoon grated lime peel ¼ teaspoon freshly ground pepper dash of low-sodium salt
Directions for marinade: Place cleaned and trimmed chicken breasts in a large zip-lock plastic bag, add above ingredients, seal bag well (removing all the air) and marinade in refrigerator for approximately 1 hour.
Ingredients for Chunky Applesauza: 2 cups of apples, cored, and chopped into small bite-sized pieces 1 large red or green Anaheim Chile pepper, seeded and chopped ½ cup red onion, chopped ½ cup red pepper, seeded and chopped ¼ cup lime juice 1 tablespoon fresh cilantro, chopped salt and pepper to taste
Directions for sauza: In a medium bowl, combine all ingredients and chill well for approximately 1 hour.
To Prepare Chicken: 1 Preheat pre-sprayed charcoal grill, electric grill, or a large skillet over a medium-high heat. Remove chicken from marinade then grill or sauté for 4-7 minutes each side or until no longer pink in center.
2 Top with the chilled Chunky-Applesauza and serve with steamed broccoli and a baked sweet potato. |
